  • 250 g fresh strawberries for the marshmallow
  • 250 g fresh strawberries for the mousse
  • 15 g gelatin
  • 30 g xylitol
  • 70 ml hot water

method

Marshmallow:

  1. Blend strawberries in a blender to a smooth paste.
  2. Add natural yogurt and xylitol and blend again.
  3. Dissolve the gelatin in hot water.
  4. After the water with gelatin has cooled, add 3 tablespoons of yogurt mixture to it and mix thoroughly.
  5. Then combine the yogurt mixture with the yogurt mixture with gelatin.
  6. Mix the whole mixture for a few minutes to aerate the mass.

Mousse:

4. Boil the sliced pumpkin for about 5-7 minutes in lightly salted boiling water. This is a short cooking time that will help preserve the flavor and texture of the pumpkin. Then strain it and let it cool.

5. Place the cooked and cooled pumpkin in a tightly closed container or freezer bag. Make sure to flush out the air to avoid frost formation.

6. Place the pumpkin in the freezer. If you’re freezing multiple portions, it’s a good idea to date the container so you know when the frozen pumpkin is still fresh.
